I am unable to set the subscription expiration date later than 2038-01-19.


The matter is that all the dates after 19 January can not be converted into a Unix timestamp as they do not fit into 32 bit integer value.


The minimum representable time is 1901-12-13, and the maximum representable time is 2038-01-19. At 03:14:07 UTC 2038-01-19  this representation overflows.
Therefore, you can still change the subscription expiration date for 01/19, because it is valid till 03:14:07 UTC. This is not a Parallels problem, but rather an issue known world-wide. At this point, it is not a crucial problem, but will be only in 2038, when the solution must be found by our developers and other IT people.
